Mad Monkey Pancakes

Ingredients

  • 1/4 cup Banana Mocha
  • Madness SustainaButter
  • 2 large bananas
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/8 tsp baking powder
  • 2 tbsp coconut oil

Directions

  • Mash bananas until texture is fairly consistent
  • In a seperate bowl, beat eggs.
  • Add vanilla, cinnamon, and mashed bananas to the eggs, and mix well.
  • Heat coconut oil in a skillet over medium-low heat.
  • Scoop ~1/4 cup of batter into the pan, cook until the center begins to bubble.
  • Flip until both sides are light brown. Repeat until all the batter is used.
  • Top the pancakes with Banana Mocha Madness butter. Add extra bananas, other fruit, or maple syrup if desired.

Cashew Goji Berry Cookies

ingredients

  • 1 cup Cashew Rendezvous SustainaButter
  • 2 eggs
  • 1/2 cup Truvia Sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 3/4 cup dried goji berries

directions

  • Preheat oven to 350°. Place the racks on the lower and upper third of the oven.
  • In a medium sized bowl, mix the SustainaButter, eggs, sugar, vanilla, and baking soda together.
  • Fold in the goji berries.
  • Scoop 1-2 tbsp of the dough into balls and place them at least one inch apart on ungreased baking sheet. Flatten the balls into desired cookie shapes.
  • Bake for about 10 min. starting on the bottom rack, switching to the top rack halfway through, until the edges turn golden.
  • Place on racks to cool, and repeat with the remaining dough.
 

Harvest Sweet Potato Mashers

Ingredients

  • 2 large sweet potato
  • 3/4 cup coconut milk
  • 1/2 cup Pecan or Pumpkin Pie SustainaButter
  • 2 slices of bacon, chopped
  • 1/4 cup Cocunut nectar
  • 2 tbsp Coconut oil

Directions

  • Skin and chop up the sweet potatoes into cubes.
  • Bring a large pot of water to boil, then boil the potatoes for about 20 minutes, until soft.
  • Meanwhile, cook the chopped bacon in a frying pan until crispy.
  • Drain sweet potatoes and place in a large bowl, or electric mixer bowl.
  • Mash the potatoes with a hand mixer, or on low with an electric mixer.
  • Add the coconut oil, coconut nectar, and coconut milk until you achieve the desired texture.
  • Add the bacon and the Sustainabutter, I find either the Pecan Keeping On, or the Pumpkin Pie flavors work great.
  • Sprinkle with salt and pepper, or other seasonings, and serve.
